You may or may not know this about me, but I'm a real life carbaholic. It's a serious addiction. Pasta, bread, potatoes, rice, more pasta....YUM! The only thing I love more than carbs are carbs with cheese on top.
These fries are the perfect side dish to accompany something much lighter. (Do I hear a salad calling my name?) Pair them with grilled chicken, BBQ tofu, or a yummy sandwich for a mouth-watering meal. Or if you're anything like my friends and I, make a big-ole-bowl of fries and eat them as your meal. Whoops!
Ingredients: (serves 4 to 6)
Step 1: Preheat oven to 450 degrees
Step 2: Wash and cut potatoes into wedges. I cut mine in half lengthwise, then each half into 3-4 wedges.
Step 3: Put potatoes in ice cold water for about 30 min. Pat dry.
Step 4: Add your 1/4 tsp salt, 1/4 tsp garlic powder, 1/4 tsp paprika, and 1/4 tsp black pepper to potatoes. Mix in large mixing bowl. Next, add your 1/4 cup of olive oil and mix again until your potatoes are completely covered!
Step 5: Line your baking sheet with parchment paper and line potatoes up so they cook evenly.
Step 6: Bake at 450 degrees for 30 to 35 minutes, or until brown and crispy.
Step 7: While they're baking, measure out your parmesan cheese and chop up your 2 tbsp fresh parsley.
Step 8: Toss potatoes in large mixing bowl with cheese and parsley.
Step 9: Serve with ketchup or dipping sauce. ENJOY!
